    30ml Sebastopol

    60ml Premium Ginger Ale

    OR

    60ml Fever Tree Indian

    Ice

    Bruise 3 fresh curry leaves to release the fragrant oils and add to glass with Gin and stir or swirl gently. Add ice and mixer and finish with a slice of fresh lemon.

  • Ginger Gypsy (GG)

    3 slices pickled ginger

    60ml Gypsy

    15ml Sofi Aperitif Blood Orange & Bitters

    30ml Ginger Ale

    7 Juniper Berries

    Place pickled or fresh ginger into a cocktail glass. Alternatively use your favourite brine.

    Add gin and aperitif with berries in a mixing glass and muddle gently. Add ice and stir for 30 seconds. Remove ice and pour into glass over ginger.

    Top up with Ginger Ale and don’t mix. This will keep the ginger chase alive in the bottom of the glass.

  • Gin Sour

    45ml Mr Wriggles

    20ml Fresh Lemon Juice fine strained

    1 egg white

    1 bar spoon caster sugar

    4 drops Wonder foam

    Combine all ingredients without ice in a cocktail shaker and dry shake for 10-15 seconds to emulsify the egg and sugar.

    Fill the large side of the shaker with as much as you can fit as this will give a bold chill and create extra fine foam.

    Double strain into a stemmed glass and garnish with a twist of citrus.

    Substitute your favourite citrus in this recipe. Mandarin or Cherry are highly recommended.
