The birthplace of Clare Valley’s wine making heritage in 1851 and 171 years later, Sawmill Gin Est. 2022. Ok, so we were late to the party but here we are all the same.

Our approach to Gin making is deliberately traditional - people have been enjoying Gin for over 300 years – so we set out to make Clare Valley’s Most Enjoyable Gin.

We only craft pot distilled single batches. What goes in is what comes out - because producing an authentic and natural product is important to us. All of our Gins use an individual selection of seven botanicals true to the Sevenhill name and are produced from natural grain spirit and purified rainwater harvested on site. Our spent botanicals are also repurposed within the vineyard.

Our vineyard and distillery are both working operations and are supported by a Cellar Door, a boutique event centre The Curly Goose and couples accomodation The Nest @ The Curly Goose
